Tonight, we’ve got some rare Copper River salmon from Whole Foods - the Copper River, in Alaska, is only open to fishing for a few months a year - and I’m pairing it with one of my favorite risotto recipes. Risotto Milanese, which is attached here, combines saffron, tomato, and lots of parmesan.
